A delicious BBQ dish that is great for the waistline

This dish is so tasty, you'd never know it was low-fat and at approx 160 calories per serving, it's great for those looking to loose weight.

If it's raining then pop it under the grill or in the oven instead.

 




  • Serves 4
  • Ingredients:
  • The Zest & Juice of 2 limes
  • 2 garlic cloves (crushed)
  • 4 tablespoons Three Counties Gourmet's 'Delia's Natural Sweet Chilli Sauce'
  • 500g chicken breasts
  • a few sprigs of coriander.

Mix together the lime, garlic and Delia's Natural Sweet Chilli Sauce.

Place about a third of the mix in a bowl with the chicken pieces, coat well and allow to marinate for at least 30 minutes or overnight in the fridge.

Grill, griddle or barbecue, turning regularly so that the marinade doesn't catch until just cooked through, 6-8 minutes.

Wrap in foil and rest for a few minutes.

To serve, spoon over the extra chilli/lime sauce and garnish with coriander.

Serve with: sweetcorn, pitta bread and Asian salads.




This is a doddle to make - taking just 15 minutes to make so is great for busy people. It does need to be left to marinade though (minimum 30 minutes), but you could prepare it the night before and leave in the fridge if necessary.
