
A lovely dish for a summer evening or winter light lunch
Our Delia's latest creation is a marvellous goat's cheese tart with a rather surprising topping.
It's such a super quick recipe that you'll soon be whipping it up on a regular basis.
- Serves 2 for light lunch or 4 for starter

- Ingredients:
- 1 fresh Goats Cheese
1 fresh Green Pepper
1 Onion
Puff Pastry (1 pack frozen ready-rolled will suffice)
1 tablespoon (15ml) Tomato Pureé
- 1 tablespoon (15ml) Three Counties Gourmet 'Boozy English Mustard'
- 1 tablespoon (15ml) Three Counties Gourmet 'Rosemary & Garlic Balsamic Vinegar'

Preheat the oven to 200ºC. Roll out the puff pastry into two rectangles. Place on a baking tray and score a frame on each, marking one inch or so from each edge.
Meanwhile, mix together the tomato purée, balsamic vinegar and mustard. Sweat the onions in a frying pan for 5 minutes, adding the peppers for the last two.
Spread the mustard mixture inside each frame and top with onions, peppers and sliced goats cheese.
Place in the oven and bake for 15 minutes. Serve immediately with a rocket and leaf salad..
We used our own new 'Rosemary & Garlic Balsamic Vinegar' for this recipe as it's wonderful flavours make it ideal. You can buy it online from us, or substitute a plain one.
This is an extremely versatile dish – just great for a summer evening meal, a super autumnal light lunch and picture perfect for your festive buffet table (hot or cold).
If you are making these for your festive buffet table then make mini ones rather than one large one - your guests will find it easier to serve and eat them whilst socialising.
